look close to see the small yellow bits of lemon rind.<\/p><\/div>\n<p>According to the Old Farmer&#8217;s Almanac, today is supposed to be the last day of the &#8220;dog days of summer&#8221;.\u00a0 Apparently the weather in Texas does not subscribe to that kind of folk lore since we&#8217;ll still be roasting well into September.\u00a0 At least.\u00a0 But when it&#8217;s really hot, that just means homemade ice cream tastes even better.<\/p>\n<p>Here&#8217;s another vintage &#8220;receipt&#8221; that we tried out.\u00a0 It is a <a href=\"http:\/\/www.foodtimeline.org\/foodicecream.html#philadelphiaicecream\" target=\"_blank\">&#8220;Philadelphia&#8221; ice cream<\/a>, made without eggs.\u00a0 It&#8217;s a bit different from what we&#8217;re used to, since these days lemon and citrus flavors are usually seen in sherbets and ices &#8211; not dairy based\u00a0ice creams.\u00a0 But it was\u00a0nicely flavored and the cream\u00a0gave\u00a0a little hint\u00a0of a buttery taste.<\/p>\n<h3><span style=\"text-decoration: underline;\">Lemon Ice Cream<\/span><\/h3>\n<p>1 quart of cream <em>(I used whipping cream in lieu of fresh cow&#8217;s cream)<\/em><\/p>\n<p>9 ounces <em>(by weight)<\/em> of powdered sugar<\/p>\n<p>4 tablespoonfuls of lemon juice<\/p>\n<p>Juice of one orange<\/p>\n<p>Grated yellow rind of 3 lemons <em>(I used a lemon zester to peel off the yellow rind and then chopped the rind fine)<\/em><\/p>\n<p>Mix the sugar, the grated rind and juice of the lemons, and the orange juice together.<\/p>\n<p>Put half the cream in a double boiler over the fire; when scalding hot, stand it aside until perfectly cold; add the remaining half of the cream and freeze it rather hard.<\/p>\n<p>Remove the crank and the lid, add the sugar mixture, replace the lid and crank, and turn rapidly for five minutes; repack to ripen.<\/p>\n<p>This will serve six people.<\/p>\n<p>Recipe from<em> <span style=\"text-decoration: underline;\">Ice Creams, Water Ices, Frozen Puddings, Together with Refreshments for all Social Affairs<\/span> by <a href=\"http:\/\/www.cooksinfo.com\/sarah-tyson-rorer\" target=\"_blank\">Mrs. S.
